Babi Guling Roast Sucking Pig
One sucking pig ready to cook from your butcher, size depends on
how many people you are going to feed.
Coconut oil and vegetable oil mixed equally with 1⁄2 teaspoon of
Stuffing – Sambal Rajang
500g small brown onions chopped up
1 tablespoon chopped garlic
2 tablespoons chopped ginger
2 tablespoons chopped chili
5 large red chili peppers chopped
1 teaspoon kencur powder (can be omitted)
1⁄2 teaspoon shrimp paste ( Roasted)
Mix together in a bowl, then fry the lot in hot oil for about 3-4
Stuff the pig with the sambal mix. Close with the skewers and rub
the oil all over the skin; place on the pre-heated spit and cook
giving 40 minutes per kilo. Brush oil mixture on every 10 minutes
If using an oven, pre-heat to 200 put the stuffed pig on an oiled
baking tray it will cook through quicker so about 30 minutes per kilo
basting with the pan juices every 10 minutes until cooked.
You can tell when it’s cooked by sticking a skewer into the thickest
part of the pig and when no blood comes out it’s cooked. The
stuffing will put the taste through the whole animal, but beware it’s
hot so when serving only put a small amount on the side of each

I’m travelling with a small group of people that trust me to
show them a good time in Bali. With this tour I made them all
get international licences because I was going to teach them
to drive the Bali-style. It took some persuasion!
“Hey this is an adventure tour and by the time your two weeks
are up you will be driving with the best of them,” I said, as we
stood in the foyer after breakfast. “I have printed out some of
the road signs you will encounter and explained some of the
differences from Australian road rules.
“ We’ll be in two cars. I will drive one and Karen will drive
the other one, her daughter Caddy will act as navigator. Karen
has driven here before so she knows her way around. Except
sometimes she has a tendency to drive the wrong way up one-
way streets as she normally rides a motorbike.

The car lurched forward in the air. Below I could see a small
stretch of sand. While we were airborne Cuddy yelled “YES!” I
saw her punch the air with her hand. The next thing the car came
down with a huge splash. All the windows were open so the car
quickly filled up to the bottom of the seats drenching us. We had

“ Yes Mom! That was the greatest adventure I’ve ever had.”
About half the village came down to help and got us out on
the beach. I tried the motor and it started first go. After paying
for the pig and the banana trees, we sat around with the village
people and ate Babi Guling ... not the pig we had hit but bought
from a warang up the road.
• When in Bali you must try roast sucking pig. This is one of
the most popular festival foods on the whole island. The Balinese
are not great meat eaters so cooked pig is a great delicacy. In
Australia Babi Gulling makes a great centre dish for outdoor
entertaining. You can hire a spit to cook the pig on, or if you are
going to use it as the main course and carve at the table you can
use a large baking tray to cook it in the oven.
The stuffing is the main difference between the French stuffed
sucking pig and the Balinese Babi Guling. h
